90 second bread

Last few weeks, I have kept to a strict diet of bone broth soup. For a variety of reasons, that meal, twice a day was working for me and I intend to keep this going. 

However, this evening, I got a craving to have bread. Just out of the blue. I have avoided gluten for so long that I see a distinct reaction when I consume any form of gluten. So I looked around the house for any left over gluten bread I could find. There was none. And it was 9pm with a lot of places closing early due to the insane COVID numbers in the US.

So I went to good old google and typed quick keto gluten free bread. And I got bombarded with a ton of suggestions. The one that said - 90 second microwave bread got my attention and I tried it. Not bad. I decoded that it was worth sharing.

Ingredients:
1 egg
1 Tablespoon butter or oil
3 Tablespoons Almond Flour
1/2 teaspoon baking powder

Mix it all together and microwave and fry for best results.

I changed up the ingredients. I added garlic powder, sesame seeds, basil and cheese in very small amounts. And used a waffle machine after it was done in the microwave. It was perfect.

I ended up eating only half the bread and I was good to go.
Kept me from having a cheat meal.
